$5.00/lb hanging weight plus slaughter and butcher fees (by others)

Often times, the process is confusing. This is a quick explanation. Hogs vary in size from 25 lb small suckling pigs to large 300 lbs hogs. Currently, we are raising free-range American Guinea Hogs that typically vary between 125-175 lbs (hanging weight). Hanging weight is live weight minus the guts, skin, hair, hooves and head. The mobile butcher charges approximately $60 per animal, and this is directly passed on to the customer. Usually, we pay for the mobile slaughter, but if we aren’t around during the slaughtering process, the cost will be routed through the butcher. After slaughter, the hogs are transported to the butcher in a refrigerated truck, weighed and assigned to the buyer. The butcher will call the customer for a custom cut order and walk the customer through the process. The butcher has a range of cost based on the cut order. Standard cuts and grinding are approximately $.55/lb hanging weight. Making seasoned pork sausage, jerky or other specialty items is more, and they will explain this to you when they call. Below is a typical process:

Live hog weighs 200 lbs

Hanging hog weighs 144 lbs ($5 * 144 lbs = $720 paid to the G&E Ranch)

Mobile Slaughter is paid by G&E Ranch approximately $60 for slaughter and delivery to butcher ($60 paid by customer to G&E Ranch)

Butcher charges $.55 * 144 = $79.20. Customer pays butcher at time of pickup.

Total cost to customer = $859.2
