Merry Christmas to everyone!!
A few weeks ago, we harvested our turkeys for Thanksgiving. We also butchered our alpaca. It was kind of a sad day to do this, but this animal was a token animal that wasn’t really contributing to the farm. We took most of the meat and ground it up with pork fat for burger. I think it tastes disgusting while Greg thinks it’s just fine. It took a lot of work for me to take one bite, and I really didn’t like it. I am not sure what we will do with, so if Greg doesn’t eat it, I will sneak it to the dogs….
We saved a portion of the meat and ground it without any pork fat and made it into pepperoni. This turned out very good. It is essentially fat-free and just mixed with spices. We let the flavors all meld together in the refrigerator for a couple of days. Next, the meat was rolled into logs about 1.5” in diameter and placed on cookie sheets. With the oven on 200 degrees, we baked three cookie sheets of meat logs for about 8 hours. In the end, the pepperoni logs shrunk to about half the size from significant drying.
When it was done, we were pleasantly surprised about how good it was. I wish we would have done that for all of the meat.
There is never a dull moment here on the farm….
