2020 went out with a BANG, quite literally. Yesterday, the mobile slaughter company came out and helped harvest our Scottish Highlander bull and a lamb.
We had hoped that they would be processed closer to Thanksgiving given that they were scheduled since mid-summer, but mobile slaughter and butcher companies are so busy, we are just thankful to get it done at all. Legally, we can slaughter and butcher animals for ourselves, but we can’t do it for customers. We were getting short on time because our lamb was 10 months old, and our bull was 2 years old. We timed it so that the young lamb doesn’t taste like an old sheep and the young sweet bull doesn’t taste like an old grumpy bull. If a sheep lives beyond a year, it will turn into Hogget (when killed between 1 & 2 years), or eventually Mutton (when killed after 2 years). Once past a year, the quality of the meat diminishes.
We still have one pure-bred Angus steer that will be harvested next summer. If anyone is interested in a quarter, half, or whole beef, let us know now. He will go very fast. We also have five ewes that should be pregnant (too early to tell) and deliver babies in early spring. That should put them on the schedule to be butchered about this time next year. Again, if anyone is interested in the meat, please let us know, and we will put you on the list.
Also, with no farmer’s markets over the holidays, we have an abundance of eggs. PLEASE reach out if you are interested!!! (We prefer to sell a minimum of 5 dozen)
